Microgreens have become a popular addition to dinner plates in Iowa and across the nation, but they’re more than just a fancy way to dress up a meal. Microgreens are nutrient powerhouses–it’s almost hard to believe how many nutrients, vitamins, and minerals, are packed within their tiny leaves.
One reason you should include microgreens in your diet? They have as much as 40 times more potent nutrients than their mature counterparts. You can often sneak them into a meal without noticing much of a difference (you can of course incorporate the flavors into your meals, as we show here), and just like that you’ve increased your intake of healthy antioxidants, vitamins and minerals.
Another good reason is that, at least in the case of Twisted River Farm greens, our microgreens are grown without the use of pesticides or herbicides. That means you can feel good that you’re not putting excess added chemicals into your body. Microgreens have a quick turn around time from seed to sow, so less chemical intervention is needed just by the nature of how they grow! Not only is this great for your health, but it’s great for the environment as well.
We could make a list a mile long that outlines the benefits of adding more leafy greens to your diet, but we won’t bore you (there’s google for that). But adding microgreens and other leafy greens regularly to your meals can offer you benefits such as: reduced risk of heart disease (shout out to fiber and Vitamin K!), better digestion (increased prebiotic fiber intake makes your gut healthy and wards off constipation), potential cancer fighting goodness (thanks to a compound called sulforaphane, often found in microbroccoli), and other wide ranging benefits. You can also feel good about eating microgreens because they’re sustainably grown. They grow quickly, they’re low cost, and require little space.
